Margarita cupcake- almost TOO close to a real margarita, haha.
I made the honey cupcakes from MS Cupcakes - not terribly "extreme," I know, but unusual to me! They were really yummy - reminded me of carrot cake.

I've had Almond Green Tea Matcha, Madagascar Bourbon Vanilla, and Dark Chocolate cupcakes from http://sugarinccupcakes.com/organic-cupcakes/ and they are excellent!
Eva (the owner) has other flavors that I have wanted to try such as Lavender & Rose Water, Horchata, and White Chocolate Raspberry.
I would love an amaretto or amaretto sour cupcake...ummmm
blech peanut butter jelly cupcake! Didn't like it at all!

Mmmm. Applesauce cupcake with caramel frosting.
I make browned butter cupcakes for DH nearly every year - one year, I put a few fresh blueberries in the middle. Delicious! I've also made several batches of lavender chocolate cupcakes - so pretty...
And I am a sucker for curry & chocolate together - I'm thinking a sticky chocolate cupcake with a coconut & curry-flavored buttercream...
I haven't really tried anything unusual but I love mint chocolate chip and would love to try that in a cupcake.
I would love to try Chai cupcake!

I would love to try a chocolate bacon cupcake. Something about that combination seems so wrong, but from what I've heard, it tastes oh so right!
Eggnog Cupcakes were the most unusual. They were yummy good, with a sprinkle of nutmeg on top.
A margarita cupcake. I followed the recipe exactly, but the tequilla was seriously overdone.

OH I would love to try some unusual fruit flavors - papaya or passion fruit. I know I have seen watermelon but never tasted it!

I've had a really good Matcha cupcake recently. I'd like to see a savory cuppy involving tomato somehow (roasted tomato soup anyone ?). Maybe a cuppy with some Italian or French cheeses involved...

i'm not one to experiment much with my cupcakes so that being said the most unusual for me was tres leches, it was great though!
I have tried tomato soup cupcakes at yellow leaf in Seattle. Pretty good, I have the cake recipe and it taste sort of like pumpkin.
