Even though I'm from New Zealand and we don't celebrate Thanksgiving, I LOVE pumpkin pie - the sweetness, the spices, the smooth, creamy filling - and it's a vegetable, right, so it's healthy, surely...?
My favourite Christmas cookies would have to be gingerbread - yummy little gingerbread men, which have to be decorated to the relevant theme (I made some last weekend for the New Zealand elections - see www.cakesbyrosa.wordpress.com if you think biting off politicians heads might be the best way of dealing with them) - or even better, a gingerbread house, dripping with sugary icing and tasty candy decorations. Mmm...
my favorite thanksgiving dessert is the dark horse...pecan pie, although i recently discovered that my distaste for pumpkin pie was really a distaste for my mother's pumpkin pie. (please don't tell her i said that!)
my favorite christmas cookies are chocolate chip cookies, but i kind of like them sans chocolate chips, so...would you call those brown sugar cookies? and as far as i am concerned, you can't beat the recipe on the back of the nestle's bag. ( http://www.verybestbaking.com/recipes/detail.aspx?ID=18476 ) but again...maybe don't tell them i leave out the chips.
there's a lot of secrets in this comment...shhhh.
Such lovely things. :)
My favorite Thanksgiving dessert is Indian Pudding, warm with vanilla ice cream on top.
My favorite Christmas cookie is classic buttery shortbread, dipped in chocolate.

My favorite Thanksgiving dessert is warm pumpkin pie with whipped cream. (And yes, I know you aren't *supposed* to eat it warm.)

For Thanksgiving, I love cranberry sauce. A lot. For reasons I don't totally understand. It's more delicious than it deserves to be.
For Christmas, it would have to be gingerbread (hands down).

1. Apple Pie
2. Rosettes (crispy, powdered and fried, but still a cookie, right?)
Rosettes-
2 large eggs
2 teaspoons granulated sugar
1 cup milk
1 tablespoon vanilla, lemon, brandy, anise, or rum extract
1 cup all-purpose flour
1/4 teaspoon salt
Vegetable oil for frying
Powdered sugar for sprinkling
In a mixing bowl, beat eggs and sugar; stir in milk and your choice of extract.
Combine flour and salt; add to batter and beat until smooth.
Heat 2 1/2-inches of oil to 365*F (185*C) in a deep fat fryer or electric skillet.
Place rosette iron in hot oil, drain, then dip in batter, three-fourths up on sides of iron (do not let batter run over top of iron). Immediately place into hot oil; loosen rosette with fork and remove iron. Fry 1 to 2 minutes per side or until golden. Remove to a wire rack covered with paper towel. Repeat with remaining batter, being sure to reheat rosette iron each time.
Sprinkle cooled cookies with powdered sugar and store in a tightly sealed container.
Makes about 4 to 5 dozen.
Note: These cookies freeze well.
Thanksgiving dessert? My mom's apple pie with vanilla ice cream. She usually makes me my own to take home... good woman.
Christmas cookie? Not really a cookie but a fabulous portable dessert and gift and wake-up-in-the-middle-of-the-night-craving-amazingness food: seven layer cookie bars.
