If I could possibly win this, I'd use that ADORABLE cupcake plate for a carrot cupcake (with raisins, of course) and cinnamon-cream-cheese frosting!
I'd make a decadent dark chocolate, chocolate chip ganache dipped cupcake. Super Chocolately and would accent little mint green cupcake plates perfectly.
I would put my *famous* baileys Irish cream cupcakes. To die for!

As much as I hate to admit it, I would probably go with Funfetti cupcakes with strawberry filling and buttercream icing... Something about summer makes me crave strawberry, and something about, well, life, makes me crave Funfetti!
I am making my Mom cupcakes for her birthday -- just something simple and pretty, vanilla cupcakes with strawberry buttercream. They would look beautiful on their own little pedestals!

So adorable! To go with all the bright, fun colors I would use one of the plates for a strawberry lemonade cupcake from my favorite local cupcake shop. Not that it would stay on the plate for long! ;)

I think with the beautiful color I would do a very generic yellow/white cake with different, bright colored buttercream and jimmies or rainbow sprinkles on top.
