Peppermint Sweet: Homemade Thin Mints a la Baking Bites for Serious Eats

Smug, smug little Girl Scouts. Those sweet little sugar pushers can be found all over around this time of year, lurking outside of drugstores and markets with their addictive little missives of sweet cookies.
Oh, they seem so friendly and accommodating now. But what happens in a month or so, when they're gone and you've got a serious jonesing for some Samoas or Thin Mints?
You make your own, that's what you do.
Armed with a recipe from Baking Bites, I tested out a batch of my favorite, Thin Mints. While I wouldn't say that they're a clone version of the boxed kind (the texture is a little different, and the taste a little...fancier), they will indeed give you that much needed fix. Now if only I could figure out how to make a little plastic sleeve for them to fit in...

Oh thank you for sharing! I'm a Girl Scout Leader (we sold 1000 boxes!) and was looking for this recipe. We're sold out for the year and had a miliary spouse call us requesting some :( So, our troop wants to make some for her.. now we can! Thanks for the inspiration :)
I know it sounds weird but if you dip ritz crackers in melted chocolate with mint extract it tastes exactly like a thin mint and is much easier to make too!

YES!! my FAVORITE!! I have also heard the Ritz cracker thing, but have not tried it- may have to do a cookie-to-cookie comparison, this recipe sounds very yummy!! I just ate a thin mint while I read this! YUM!!
I just checked out Baking Bite's other faux GS recipes, awesome! ...Howver there is something special about tearing into a package of the real thing, calories don't apply if you bought the cookies from an adorable little neighbor raising money for a trip, right? That's my logic at least. :P

You can buy Keebler Grasshopper cookies and they are just like the thin mints!
Yes, the Ritz cracker recipe does work. They are amazing and taste just like the real thing!!!! Best to use good semi sweet or bittersweet chocolate and peppermint oil rather than extract.
Well Jess, I tried to convince this poor innocent little Girl Scout that I would need my Thin Mints delivered one sleeve at a time over several months. The poor dear just looked at me like so many former students have when I have begun my Terrorist Teacher Tactics! Yes, you gave me the look several times as a ten year old!!! Fortunately the child's mother had a sense of humor!!!
It must be thin mint week! I made thin mint chunk cookies and thin mint cupcakes which turned out awesome for my blog!
