The waffles at Cafe Medina is not exactly a dessert but they are ridiculously good. They are pretty much a dessert with the milk chocolate topping.

Please make sure you go to Notte's Bon Ton Cafe, on W. Broadway. They have very old school European cakes. The Diplomat cake is one of the best ever!

If you can make it out there while you are in Vancouver, Butter, on Dunbar, has amazing marshmallows, and if you are lucky, you might be able to get one of their marshmallow frosted cakes or cupcakes! Either way, you should definitely try the marshmallows.
