What about fruit? I love a good fall pear/cranberry crumble? Pumpkin cake with thick creamcheese frosting!
While coconut macaroons *are* seriously underrated, my underdog dessert vote must go to chocolate pudding. If we move past the Snack Packs and Jell-o cups of our childhoods, we'll find that homemade chocolate pudding is perhaps one of the greatest comfort foods in existence.
Ooh, I totally agree with Sara and Alex that a good old-fashioned bowl of fruit is fabulous! Make a parfait with some sort of sweet yogurt curd or just throw a dollop of whipped topping on top! Yummy!
I think chocolate fondue would be awesome!
I think caramelized pears would be a great mix!
I guess you're referring to things like carrot cake but with parsnips instead?

I'm going with Jello salad. Cube the Jello and then throw it into a bowl with a bunch of fruit chunks and mix together with Cool Whip. Refreshing!

vanilla ice cream! Everyone always says it is totally boring, but it is my favorite! It couples well with SO many things and yet stands along strong and brilliant! i love the stuff!
I once had an old-fashioned style carrot cake that was full of carrot shavings and more dense and fibre-y. It was amazing and all I can find these days are fluffy carrot cake desserts that are totally unsatisfying and bland. Does anyone have a recipe for the old-fashioned kind?

Hands down eclair cake has never been appreciated. When I moved to New York and tried explaining how great it was people looked at me with their noses turned up. How can you go wrong with vanilla pudding, dream whip, graham crackers and whipped chocolate frosting?
You know what I think is underrated? Chocolate ice cream...just a big bowl of it. No fudge or sauce on top, no marshmallows, choc chips, cookie pieces...nothing but the ice cream! And plenty of it!!! :)

I love crumbles with really tart ingredients like cranberries, dried tart bing cherries and Granny Smith apples.
Ice cream bombes. Festive large or small with infinite possibilities. Could it be manufactured ice cream cakes have replaced them? I still love these things.
